  • A small, heat-resistant jar with a handle (classic: the so-called one-pint jar)
  • A simple mocha
  • Freshly whipped cream (preferably from the cream dispenser for a uniform consistency)
  • Optional: powdered sugar (not in the coffee, but on top of the whipped cream!)

The ratio is crucial: the strong mocha forms the flavorful foundation, while the whipped cream provides a mild, creamy component.

Professional barista’s recommendation: If you like it sweet, dust the topping discreetly with powdered sugar – the stylish way to sweeten your single-origin coffee! But please do not use granulated sugar, as this would destroy the topping.

Einspänner recipe: how to easily prepare the Viennese classic

Preparing a one-pounder is straightforward, as long as you know what’s important. Here is the original recipe in 5 simple steps:

Ingredients for the single-origin coffee:

  • 1 mocha (e.g. with WIENER MOKKA from fabia)
  • Freshly chilled whipped cream
  • Powdered sugar (optional)
  • 1 heat-resistant glass with handle

Preparation of one-piece – step by step:

  1. Preheat the glass. Tip from the fabia barista: Rinse the glass with hot water to prevent the mocha from cooling down immediately. A must for the perfect drinking temperature!

  3. Whip the cream: Use well-chilled cream and whip until light and creamy. Not too stiff, but not runny either. A cream dispenser ensures an even consistency and the perfect look.
  4. Pour the mocha into the glass: Pour the hot mocha directly into the preheated glass. Make sure that around a third of the glass remains empty. The remaining space is reserved for the whipped cream.
  5. Top with whipped cream: Carefully spoon the cream onto the coffee to form a stable cap. Even better: use a cream dispenser to create the perfect dollop of whipped cream.

The history of the single horse-drawn carriage: how it became a Viennese classic

As the name suggests, the one-horse carriage has its origins in the one-horse carriages that once drove through the streets of Vienna. During breaks in the journey, the coachmen held the reins in one hand and the glass with the strong, hot coffee in the other. The top cap had a dual function: it insulated the coffee from cooling down and at the same time provided a little energy boost in the form of cream. When customers arrived, the cream was simply stirred in – this cooled the mocha down quickly and allowed it to be drunk quickly. A real “coffee hack” of the time!

Both coffee classics originate from the traditional Viennese coffee house culture and both have their roots in the everyday life of the Fiaker, the famous coachmen who once characterized the cityscape of Vienna. Nevertheless, Einspänner and Fiaker differ significantly in their preparation and character.

With the Einspänner, the focus is on pure enjoyment: a strong mocha forms the base, crowned with a topping of whipped cream. The taste is clear, intense and unadulterated, in short: a homage to classic coffee preparation. The Fiaker, on the other hand, is the more playful version with a “shot”: here, too, a mocha is poured into the glass, but a shot of alcohol (usually rum) provides an additional warming, powerful note. The Fiaker is therefore a coffee with a kick, perfect for cold days or as a digestif after a meal. The top cap is also a must here.
